Instructions:

  1. Rinse the black beans under cold water and soak them overnight or for at least 8 hours.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent.
  3. Add the diced carrot, celery, and red bell pepper to the pot, and cook until the vegetables are tender.
  4. Drain and rinse the soaked black beans, then add them to the pot along with the cumin powder, chili powder, and paprika. Stir to combine.
  5. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat to low, cover, and simmer for about 1 to 1.5 hours, or until the beans are tender.
  6. Once the beans are cooked, use an immersion blender to partially blend the soup to your desired consistency. Alternatively, transfer a portion of the soup to a blender and blend until smooth, then return it to the pot.
  7. Season the soup with salt, pepper, and lime juice to taste.
  8. Serve the black bean soup hot, garnished with fresh cilantro.
